Dear kitchen, the last platter was generous by ordinary standards, which is exactly the problem. Ordinary standards produce ordinary dumplings. I require wider porcelain, deeper steam, and a respectful pause before the lid rises. Do not add arms, legs, garnish, or tiny companions. Arrange the pleats, polish the table, and leave room for the main course to describe itself as the main course.
